The Bun Bo Hue Project - Vietnamese food beyond pho and banh mi.


Bun bo Hue is a spicy beef, lemongrass and shrimp noodle soup from central Vietnam. It's typically served with lots of fresh herbs, onions, as well as various bits of pork and beef. The bits typiclly include gravy beef, pork shank, and (essentially), blood tofu. Vietnamese sausage (Cha Lua), pork trotter, and springy meatballs (Bo Vien), often make an appearance. The bowls are massive, aromatic, and comforting. Really a perfect food. After discovering this soup, I realised that my experience of Vietnamese food didn't really extend much beyond Pho and Banh Mi. I think that this is surprisingly typical, even in a city with a huge Vietnamese population. The goal of the Bun bo Hue project is twofold.

  1. To gain a broader understanding of Vietnamese food by trying as many new dishes as possible.
  2. To gain a particularly deep understanding of a single dish - Bun bo Hue - by learning what I like, and by trying to locate the best possible version!
